You know those times when you forget you have lunch guests and your cupboards and fridge are almost bare? Yeah, that! After a few deep breaths to stave off mild panic I managed to find a two person portion of sausage and pasta one pot and half a pack of mixed vegetables in the freezer, some chorizo and cheese in the fridge and some passata in the cupboard. I turned all of that into a delicious pasta bake for lunch that served 8, accompanied by steamed greens from our garden and hastily made fresh herb scones.
If we hadn't any chorizo I would've added 1 tablespoon of paprika and a clove of garlic to a pan and sauteed that before adding the leftovers, passata and mixed vegetables.
I finely chopped the chorizo and cooked it in a pan over a moderate heat for a few minutes before adding the leftover sausage and pasta one pot, passata and mixed vegetables. I let this simmer whilst I made a thick cheese sauce in another saucepan.
Pour the chorizo and vegetable mixture into an ovenproof dish. Spoon the cheese sauce over the top, sprinkle over a little extra grated cheese then bake at 180C for 20 minutes until heated through and the top is golden. Serve with steamed greens or a salad.
