One Pot Bolognese

One pot recipes are my absolute favourite, minimal washing up, and they're usually really low fuss. Busy weeknights with hangry family waiting for dinner in a hurry are pretty standard in our house so any recipe that I can whip up which pleases everyone and cuts down on the clean up is a winner for me.

I've made various versions of this recipe for a while, changing the mince and herbs used, adding some chilli to spice things up, using whatever pasta shapes we have in the cupboard. The cheese topping is always welcomed by my lot, and I usually serve this dish with steamed greens or mixed vegetables.

One Pot Bolognese

1 Tblsp oil
2 peppers, deseeded and diced (any colour will do)
1 large onion, peeled and diced
2 cloves garlic, minced
500g beef mince
400g tin of chopped tomatoes
4 Tblsp tomato paste
750ml rich beef stock
1 Tblsp dried mixed herbs
500g dried wholemeal penne pasta
150g grated mature cheddar cheese, or more if you want

You will need a large pot for this recipe, which has an accompanying lid. Heat the oil in a large pot over a moderate heat. Add the peppers and onion, cooking until they have softened. Add the garlic and cook for a couple of minutes. 

Tip in the mince, breaking it up as it browns. You want the beef to be thoroughly broken up and no longer pink. Add the tinned tomatoes, tomato paste, beef stock, mixed herbs, and stir until completely combined.

Reduce the heat to medium/low then stir through the pasta. Cover and cook for 15 minutes, stirring occasionally. Check that the pasta is cooked to your liking, cover and cook a little longer if necessary.

Sprinkle the cheese on top and put the lid back on the pan, cook for a few minutes until the cheese melts.  You could put the pot under a preheated grill if you want the cheese golden and bubbling.  We serve ours with wilted greens and steamed mixed vegetables.

The week we're all properly back in routine, work and school as usual for everyone.  It makes Meal Planning easier, and there will be no children raiding the fridge and cupboards for random snacks throughout the day.

Breakfasts will be porridge or toast with fruit depending on the morning.  Weekend breakfasts will be pancakes and homemade crumpets or toasted teacakes.

Packed lunches will be Root Vegetable and Red Lentil Dhal and Butternut Squash and Lentil Curry alternated each day, served in flasks with homemade wholemeal bread rolls, a piece of fruit, and a baked treat for afters.

Weekend Lunches will be Twice Baked Potatoes, using already baked potatoes from the freezer, and Vegetable and Pearl Barley Soup with homemade bread rolls.

Dinners


Pepper, Sausage and Gnocchi Traybake

4 peppers, any colour, deseeded and cut into chunks
2 onions, peeled and cut into eighths
300g cherry tomatoes
2 x 500g packs of gnocchi
2 Tblsp oil
12 pork sausages

Preheat your oven to 200C/180C Fan/Gas Mark 6.

Toss together the peppers, onion, tomatoes, gnocchi and olive oil and spread out on to a large foil lined baking tray.

Put the sausages on top of the vegetables then put the tray into the preheated oven. Bake for 30 minutes, or until the sausages are cooked through, the gnocchi are golden, and the vegetables are tender. Serve with steamed greens or mixed vegetables.

Koshari

This is a delicious and filling store cupboard supper, perfect for using up part packets of pasta and rice. Koshari is an Egyptian street food dish made from rice, lentils and macaroni, topped with crisp onions and spicy tomato sauce.  The ingredients use to make this scrumptious supper came to £1.42, excluding energy costs,  I served it with steamed greens from our garden (free), but you could serve it with 500g steamed mixed vegetables for an extra 47p.

It does take a long time to get the onions really caramelised and tasty, don't rush that step it's well worth taking the time.  The rice, lentils, and macaroni are all cooked separately which might seem a bit of a faff but you can have them all going at the same time, or use a tin of lentils to cut out a step.

Koshari  

3 large onions, diced (30p)
2 cloves of garlic (5p) 
400g tin of chopped tomatoes (28p) 
1 Tblsp tomato purée (2p) 
pinch of chilli flakes, pinch of chilli powder or dash of hot sauce (5p)
1 cup (150g) lentils, rinsed and drained (39p) 
1 cup (200g) rice, rinsed and drained (9p) 
1 tsp ground cumin (2p)
1 tsp ground cinnamon (2p)
1 cup (150g) macaroni (20p)
Heat the oil in a large pan and cook the onions until deep golden, this can take a good 30 - 40 minutes.  Don't rush this step, your dish will be so much more flavoursome if you take the time to get the onions right.  Once the onions are deliciously brown and sticky, put a sieve over a bowl and tip the onions into it, so the deliciously flavoured oil drains into the bowl. 

Heat one teaspoonful of the onion oil in a small pan and crush or mince in a garlic clove.  Cook for a few seconds before adding the tomatoes, tomato purée and chilli.  Fill up the empty tomato tin with water and add this too.  Cook, uncovered, until thickened to a rich sauce. 

Put the lentils in a pan and cover generously with water. Add the other garlic clove, bring to the boil and cook for 25 minutes or until tender. Drain well and set aside. 

Heat the remaining oil from the onions in a saucepan and add the spices. Cook for a few seconds until fragrant, then add the rice. Cook, stirring to coat the rice in the oil and spices, then add one and a half cups of water and a large pinch of salt. Bring to the boil, cover tightly, and cook for 10 minutes until cooked through and all the water has been absorbed.  Leave covered for a further 10 minutes whilst you quickly cook the macaroni according to packet instructions. 

Mix the rice with the lentils and macaroni, season to taste.  Top with the rich tomato sauce and the caramelised onions.




OUR FAMILY MEAL PLAN FOR WEEK OF 08/10/18 - £70

I struggled to write our meal plan this week.  Inspiration didn't strike me, and when I asked my family, they weren't really bothered what we had as long as it was tasty.  I've had a mooch about on the internet and found some new recipes to try with my lot along with some of my own recipes.   

Breakfasts will probably be more Pumpkin Spiced Granola as that went down well with everyone and it's not quite cold enough for porridge just yet.  Weekend breakfasts will probably be pancakes one morning and crumpets the other.  I'll make a double batch of crumpets so I can stash some in the freezer for later.

Packed lunches will be falafel wraps or mini frittatas with crudites, a piece of fruit and a baked treat for after.  Weekend lunches will be homemade pizzas and we're going out for lunch on Sunday.


Dinners

Meatfree Monday Red Lentil and Aubergine Moussaka served with steamed mixed vegetables and greens

Macaroni Cheese with mixed vegetables

Jollof Rice with Chicken served with steamed mixed vegetables and greens

Puy Lentil Bolognese with wholewheat spaghetti and steamed greens

Slow Cooker Beef Keema

2 large onions
8 cloves garlic
10cm/4 inches fresh ginger
4 tsp ground coriander
2 tsp ground tumeric
4 tsp ground cumin
4 green chillies
1kg beef mince
4 cardamom pods
1/2 tsp ground cloves
2 tsp ground cinnamon or 2 cinnamon sticks
6 Tblsp tomato puree
400ml water
2 Tblsp garam masala

Puree the onion, garlic, ginger, spices and chilli in a food processor or hand blender.  Stir through the beef mince and put everything into the slow cooker.  Add the rest of the ingredients, except for the garam masala.  Stir well and cook on low for 6 hours on high or 7 - 8 hours on low.  About an hour before you want to serve the curry, remove the slow cooker lid and stir through the garam masala.  Replace the lid then cook for the final hour.  Serve with cooked rice and/or Naan bread, steamed vegetables and greens.

OUR FAMILY MEAL PLAN FOR WEEK OF 24/09/18 - £45

We're still in super frugal mode this week leading up to payday. Hopefully things with our tax credits will be sorted out soon so our meal plans can be slightly more adventurous and varied again.  I'm trying to get our groceries as cheaply as I can this week whilst still having tasty, filling and nutritionally sound meals.

Breakfasts will be porridge with foraged blackberries from the freezer, there's leftover plum and apple compote from last week that we can use too.

Lunches will either be egg and mayo/homemade hummus, with grated carrot and sliced cucumber.  There will be a piece of fruit and baked treat for afters.  Weekend lunches will be Twice Baked Potatoes and End of the Week Frittata.


Snacks will be popcorn, scones, and a cup of soup with a homemade bread roll.  I've made two batches of Tomato Soup and Basic Vegetable Soup and frozen them in portions for after school snacks.

Dinners

Slow Cooker Red Lentil Bolognese, with pasta one night and on baked potatoes later in week


Slow Cooker Hoppin' John with rice and steamed greens


Pearl Barley Risotto (two nights)


Slow Cooker Black Eye Bean Chilli with rice and mixed vegetables

2 tsp ground cumin
2 tsp ground coriander
1 tsp chilli powder (use more or less to taste)
200g black eyed beans
1 bay leaf
2 tsp smoked paprika
1 tsp dried oregano
1 Tblsp marmite/vegemite
1 Tblsp tomatoe paste
400g tin chopped tomatoes
500ml water

Put all the ingredients in your slow cooker, stir well to combine.  Cook on low for 8 hours.  We serve ours with a dollop of natural yoghurt or soured cream, cooked rice, and mixed vegetables.

OUR FAMILY MEAL PLAN FOR WEEK OF 10/09/18 - £60

Everyone is properly back to school and Nursery so it will be the first full week in routine.  I'm sure we'll all be completely knackered by Friday.  Back to our usual schedule means that on a Tuesday, Thursday and Friday at least one of our children will need an early dinner or one that can be easily reheated later on.  

The weather is cool enough now for the older ones to have a cup of soup, with homemade bread, after school as a snack.  This stops them from being quite so 'hangry' and gives them an extra potion of vegetables which is never a bad thing.  I've made Vegetable and Pearl Barley Soup and Tomato Soup then frozen portions in silicone muffin cases ready to defrost and serve in a mug for each person.


Breakfasts on weekdays will be porridge with homemade compote, a good hearty start to the day which will hopefully keep them going until morning break.  Weekend breakfasts will be pancakes and scrambled eggs on toast.



Packed lunches will be Pull Apart Picnic Bread with crudites/homemade vegetable crisps, a piece of fruit, and a baked treat. 



Weekend lunches will be Versatile and Thrifty Flatbreads and 10 Minute Spicy Bean Burgers.



Dinners

Vegetable Fried Rice (using brown rice)


Sausage and Roast Vegetable Traybake with steamed greens

Spicy Slow Cooker Lentil and Chickpea Soup

1 ½ cups green lentils
1 onion, finely diced
1 inch knob of fresh ginger, finely grated
2 cloves garlic, minced or finely grated
3 carrots, roughly diced
2 peppers, roughly diced
400g tin chopped tomatoes
1 litre vegetable stock
1 Tblsp chilli powder, use more or less to your taste
2 tsp smoked paprika
1 tsp cumin
1 tsp ground coriander
1 tsp cinnamon
salt and pepper to taste
1 Tblsp fresh lemon juice
400g tin chickpeas, drained

Put all of the ingredients, apart from the chickpeas and lemon juice, into your slow cooker and stir to combine. Cover and cook on low for 6-8 hours or on high for 4-6 hours.  Add the lemon juice and chickpeas, stir well and cook for a further 30 minutes until the chickpeas have heated through.  Season to taste then serve in bowls, garnish with fresh herbs if you like, and have some flatbreads on the side.
