Koshari

This is a delicious and filling store cupboard supper, perfect for using up part packets of pasta and rice. Koshari is an Egyptian street food dish made from rice, lentils and macaroni, topped with crisp onions and spicy tomato sauce.  The ingredients use to make this scrumptious supper came to £1.42, excluding energy costs,  I served it with steamed greens from our garden (free), but you could serve it with 500g steamed mixed vegetables for an extra 47p.

It does take a long time to get the onions really caramelised and tasty, don't rush that step it's well worth taking the time.  The rice, lentils, and macaroni are all cooked separately which might seem a bit of a faff but you can have them all going at the same time, or use a tin of lentils to cut out a step.

Koshari  

3 large onions, diced (30p)
2 cloves of garlic (5p) 
400g tin of chopped tomatoes (28p) 
1 Tblsp tomato purée (2p) 
pinch of chilli flakes, pinch of chilli powder or dash of hot sauce (5p)
1 cup (150g) lentils, rinsed and drained (39p) 
1 cup (200g) rice, rinsed and drained (9p) 
1 tsp ground cumin (2p)
1 tsp ground cinnamon (2p)
1 cup (150g) macaroni (20p)
Heat the oil in a large pan and cook the onions until deep golden, this can take a good 30 - 40 minutes.  Don't rush this step, your dish will be so much more flavoursome if you take the time to get the onions right.  Once the onions are deliciously brown and sticky, put a sieve over a bowl and tip the onions into it, so the deliciously flavoured oil drains into the bowl. 

Heat one teaspoonful of the onion oil in a small pan and crush or mince in a garlic clove.  Cook for a few seconds before adding the tomatoes, tomato purée and chilli.  Fill up the empty tomato tin with water and add this too.  Cook, uncovered, until thickened to a rich sauce. 

Put the lentils in a pan and cover generously with water. Add the other garlic clove, bring to the boil and cook for 25 minutes or until tender. Drain well and set aside. 

Heat the remaining oil from the onions in a saucepan and add the spices. Cook for a few seconds until fragrant, then add the rice. Cook, stirring to coat the rice in the oil and spices, then add one and a half cups of water and a large pinch of salt. Bring to the boil, cover tightly, and cook for 10 minutes until cooked through and all the water has been absorbed.  Leave covered for a further 10 minutes whilst you quickly cook the macaroni according to packet instructions. 

Mix the rice with the lentils and macaroni, season to taste.  Top with the rich tomato sauce and the caramelised onions.




OUR FAMILY MEAL PLAN FOR WEEK OF 24/09/18 - £45

We're still in super frugal mode this week leading up to payday. Hopefully things with our tax credits will be sorted out soon so our meal plans can be slightly more adventurous and varied again.  I'm trying to get our groceries as cheaply as I can this week whilst still having tasty, filling and nutritionally sound meals.

Breakfasts will be porridge with foraged blackberries from the freezer, there's leftover plum and apple compote from last week that we can use too.

Lunches will either be egg and mayo/homemade hummus, with grated carrot and sliced cucumber.  There will be a piece of fruit and baked treat for afters.  Weekend lunches will be Twice Baked Potatoes and End of the Week Frittata.


Snacks will be popcorn, scones, and a cup of soup with a homemade bread roll.  I've made two batches of Tomato Soup and Basic Vegetable Soup and frozen them in portions for after school snacks.

Dinners

Slow Cooker Red Lentil Bolognese, with pasta one night and on baked potatoes later in week


Slow Cooker Hoppin' John with rice and steamed greens


Pearl Barley Risotto (two nights)


Slow Cooker Black Eye Bean Chilli with rice and mixed vegetables

2 tsp ground cumin
2 tsp ground coriander
1 tsp chilli powder (use more or less to taste)
200g black eyed beans
1 bay leaf
2 tsp smoked paprika
1 tsp dried oregano
1 Tblsp marmite/vegemite
1 Tblsp tomatoe paste
400g tin chopped tomatoes
500ml water

Put all the ingredients in your slow cooker, stir well to combine.  Cook on low for 8 hours.  We serve ours with a dollop of natural yoghurt or soured cream, cooked rice, and mixed vegetables.

OUR FAMILY MEAL PLAN FOR WEEK OF 17/09/18 - £42

We're facing another couple of Mother Hubbard weeks.  A (hopefully) temporary issue with our tax credits means we have had significantly less money coming in the last couple of weeks, and it could take another couple of weeks to sort it out.  One of the few expenses we can control, that isn't a fixed amount, is our grocery spend and we'll need to really be frugal for at least a fortnight or more.

We'll be using up any provisions in the cupboards and have been foraging again.  We picked 3kg of blackberries 2.5kg of plums and 3kg of apples from our local parkland and common.  About a third of the apples will keep OK in the fruit bowl this week, the other two thirds I've made a couple of crumbles and some compote with the plums to have with yoghurt as a snack or pudding.


Our garden is still providing fresh herbs, lots of chard, and small amounts of salad greens so of course I'll be using those in our meals this week.


Breakfasts will be porridge with foraged blackberries on weekdays, weekend breakfasts will be pancakes and maybe English muffins.


Packed lunches will be Wholemeal Vegemite and Cheese Bread Swirls with crudites and homemade hummus, a piece of fruit and a baked treat for afters.  Weekend lunches will be Twice Baked Potatoes and Basic Vegetable Soup with homemade wholemeal bread rolls.

OUR FAMILY MEAL PLAN FOR WEEK OF 27/08/18 - £43

This is definitely a Mother Hubbard week for us. We’ve had eye tests for all of the children and of course new glasses were needed, a couple of new bicycle tyres were needed, the last of school uniform shopping, school shoe shopping, and my husband needed new shoes too as when it belted with rain he discovered his were holey. This means that payday on Friday cannot come soon enough.


We’ll be using up what we have in the cupboards, and buying the bare minimum, to get us through the last full week of school holidays. We’ve got more blackberries, foraged from the local common, and our apple tree is still laden with fruit. Our back garden still has fresh herbs, raspberries, rhubarb, chard and rocket. Thank goodness for free foraged and homegrown food!


I walked up to the local butcher and got six chicken frames for free. They were from free range chickens, and there’s still quite a bit of meat left on them. I’ll get as much of the meat off them as I can then make stock. The meat will go into a stir fry, and the rice will be cooked in the stock. That will be one tasty and very cheap dinner. I’ll also be making chicken soup from the stock.

I'll be adding cooked pearl barley to our soups, especially the blended ones, because it bulks out the soups and adds more protein and minerals for a very low cost.  Once blended you can't tell the barley is in there, perfect for picky eaters.  I've added tinned beans in the past for this reason too, cannellini beans and haricot beans are easiest to disguise.  There's a handy guide to cooking pearl barley here.

Breakfasts will be porridge or overnight oats with apple and blackberry or apple and rhubarb compote. Weekend breakfasts will be pancakes and bacon butties.


Snacks will be popcorn, homemade rice pudding pots, homemade yoghurt with fruit compote, scone swirls and flapjacks.


Lunches will be soups as the weather has turned cooler. We’ll have homemade wholemeal bread rolls with the soups to help fill us up. We’ll be having Slow Cooker French Onion Soup, Mixed Vegetable Soup, Tomato and Basil Soup, Spicy Roast Sweet Potato and Carrot Soup, and Basic Vegetable Soup.  Weekend lunches will be Twice Baked Potatoes and Caramelised Onion Swirls both with salad greens from the garden.



Dinners

Bean and Rice Burritos 

1 Tblsp oil 
1 onion, finely chopped 
4 cloves garlic, minced 
2 tsp paprika 
400g tin chilli beans 
400g tin black beans, drained 
400g tin chopped tomatoes 
1 carrot, grated 
300g frozen spinach, defrosted with the water squeezed out or finely shredded fresh chard
1 tsp dried mixed herbs 
½ tsp chilli (to taste) 
3 cups cooked rice, I used brown 
10-12 tortillas 
1 cup grated cheese« 

Heat oil in a large frying pan or pot over a medium heat and cook the onion until softened, approximately 5 minutes. Add the garlic and paprika and fry for a further couple of two minutes. Mix in the chilli beans and black beans, chopped tomatoes, carrots, spinach, mixed herbs, chilli powder and rice. Simmer the mixture uncovered for 10-15 minutes, stirring occasionally until it has thickened. Season with salt and pepper to taste. 

To assemble the burritos, heat the tortillas according to the package instructions. Spoon a little of the bean and rice mixture in the centre of each tortilla. Sprinkle with grated cheese. Fold the edges and roll up to make the burrito.


Macaroni Cheese - I make my own cheese sauce using a roux base and add frozen mixed vegetables to the pasta during the last few minutes of cooking time. Our Macaroni Cheese usually has plenty of vegetables with the pasta in a rich cheddar cheese sauce.



Chicken Fried Rice 

2 cups long grain rice
600ml stock or water
6 eggs, lightly beaten
2 Tblsp/30ml oil 
1 onion, finely diced
1kg mixed frozen vegetables
300g leftover cooked chicken, shredded
45ml soy sauce, salt reduced (use more or less, to taste) 

Rinse the rice under cold running water until the water is clear then put the rice and stock into a saucepan and bring to the boil with the lid on.  Reduce heat to the lowest setting and cook for 20 minutes or until the stock has been absorbed and the rice is cooked.  Remove from the heat and allow to cool.  

Heat a wok or large frying pan with half of the oil.  Add the beaten eggs and cook until lightly scrambled. Remove eggs and roughly chop.  Add the rest of the oil to the wok and add the onion and vegetables. Stir-fry until nearly cooked.   Add cooked rice and chicken and cook until piping hot and heated through.  Add eggs back to the wok with soy sauce and mix thoroughly, making sure every thing is piping hot, leave to cool a little then serve. 



Slow Cooker Veggie Bolognese (Vegan) served with pasta and mixed vegetables


Chicken Soup

Leftover cooked chicken
1 Tblsp oil 
2 onions, diced
2 large carrots, sliced
2 celery stalks, chopped
1.5 litres chicken stock
1/2 cup pearl barley, rinsed
2 Tblsp fresh parsley, finely chopped

Heat oil in a large saucepan over medium-high heat. Add onions, carrot and celery. Cook, stirring, for 5 minutes or until the onion softens. Add stock and bring to the boil. Add barley the reduce the heat to low. Simmer, partially covered, skimming any foam from the surface, for 25 to 30 minutes or until the vegetables and barley are tender. Add cooked chicken and simmer for a further 10 minutes until the chicken is heated through. Stir in parsley. Season to taste then serve.

OUR FAMILY MEAL PLAN FOR WEEK OF 26/03/2018 - £51

I've largely recovered from they lurgy that I had last week, however our 3yo has picked up yet another illness from Nursery. He's got 'the cough' and a cold, thankfully he only had a fever for about 24 hours this time.  

We're having a Mother Hubbard Week, because March is a 5 week month and we've had some unforeseen expenses.  This means we're in super frugal mode spending as little as we can on groceries this week, and using up any leftover store cupboard provisions. 

I usually do a stock take before I make up our Meal Plan each week, this week I was extra thorough.  We've baking supplies, bread making ingredients, and porridge so that's breakfast and baked treats sorted.  We've also got some tins of fruit and beans, various part packs of frozen vegetables, and some part packs of lentils that I've purchased for recipe development but not used up.  I've also got a whole free range chicken (yellow sticker bargain £1.20) stashed in the freezer.

I've included all the items that I will be using in the shopping list at full cost because it's much easier for people to follow.  Obviously it will be a cheaper week for us than the shopping list total as I already have some items in our freezer and store cupboard.

Meal Plan

Breakfasts will be porridge topped with tinned fruit or toast with spread, and a piece of fruit for afters.  I'll make crumpets one morning over the weekend.

Packed lunches will be Wholemeal Savoury Swirls filled with Vegemite and cheese, crudites, herbed yoghurt dip, a small baked treat, and a piece of fruit for the first half of the week. The second half of the week I'll fill the swirls with leftover lentil bolognese as normal.


Weekend lunches will be Rice and Vegetable Bake and Spicy Roast Sweet Potato and Carrot Soup.



Dinners

Root Vegetable and Red Lentil Dhal - served with homemade Naan for Meatfree Monday


Quick Bean Chilli served with rice and mixed vegetables.



Red Lentil Bolognese - double batch 3/4 for dinner and rest to fill Wholemeal Savoury Swirls.  Served with pasta and mixed vegetables.

Roast Chicken with all the trimmings

Chicken Fried Rice

4 spring onions, sliced
500g frozen mixed vegetables
4 cups cooked rice (or use microwaveable rice)
2 cups shredded cooked chicken
2 Tblsp salt-reduced soy sauce

Heat a large, non-stick frying pan over a medium heat. Spray with oil then fry spring onions for 1-2 minutes. Add frozen vegetables and fry for a couple more minutes until cooked through.

Add rice, chicken and soy sauce to pan and stir to combine. Heat for a few minutes more then serve immediately.

12 Muffin Tin Chicken Tarts - served with mash and mixed vegetables.

Macaroni Cheese with mixed vegetables.
