Our Meal Plan is back this week after a break last week because worked an extra shift so consequently ran out of time to blog it. This week is thankfully a little less hectic, however I do have several evening events, and a day in London, as well as work so meals will need to be low faff as usual.
Breakfasts will be porridge with fruit compote. Packed lunches will be Wholemeal Savoury Swirls or leftovers from dinner the previous night with crudites, a piece of fruit and a small baked treat. I baked several batches of Wholemeal Savoury Swirls over the weekend and froze them for later this week to save having to bake again midweek. Weekend lunches will be Twice Baked Potatoes and Vegetable Quiche.
Dinners
Spicy Vegetable Stew
1 Tblsp oil
1 onion, diced
3 cloves garlic, crushed
2 stalks celery, finely chopped
1 pepper, diced
2 tsp ground ginger
1 tsp tumeric
1 tsp garam masala
1 tsp cardamom
1 tsp cumin
1 litre vegetable stock
400g tin chopped tomatoes
75g red lentils
2 x 400g tins kidney beans
2 large potatoes, peeled and diced
Heat the oil in a large saucepan and saute the onion garlic, celery and pepper until the vegetables start to soften and the onion is transparent. Stir in the spices and continue cooking for a minute or two until the spices are fragrant. Add the stock, tomatoes, lentils and kidney beans. Simmer for 15 minutes. Add the prepared potatoes then simmer for half an hour. Stir often towards the end of the cooking time as the stew will be quite thick and may start to catch on the bottom of the pan. We serve ours with wholemeal rolls and steamed greens.
Quick Spaghetti with Tomato and Bacon Sauce
1 Tblsp oil
1 onion, finely diced
2 cloves garlic, crushed
1 pepper, finely diced
3 rashers bacon, rind removed then rashers diced
2 courgettes, finely diced
400g tin chopped tomatoes
1 tsp dried oregano or mixed herbs
1 tsp sugar
125ml water
500g spaghetti
salt and pepper to taste
grated cheese to serve
Heat the oil in a frying pan then saute the onion, garlic, pepper, bacon and courgette until the vegetables have softened. Add the tinned tomatoes, herbs, sugar and water. Simmer uncovered until thickened, around 10 minutes.
Whilst the sauce is simmering cook the pasta according to packet instructions. Toss the cooked pasta through the sauce and serve topped with grated cheese.

Sounds gorgeous! You've got me craving sausage rolls now! I love the savoury swirls, I used to have them at school and have recreated them since with ham or bacon and cheese, never thought to put anything else in them, will have to give it a try! x

DeleteThis is a fantastic idea, I keep meaning to do something similar along the lines of cheap cuts of meat from local farmers and farm shops along with buying in bulk as a group.
ReplyDeleteThat's a fab idea, you could cook as a group too, one dish each then share it out in family portions. Many hands/ovens make light work :)
