We spent a couple of hours at our shared allotment yesterday evening and swapped some rhubarb for some freshly picked asparagus whilst we were there. Once we arrived home we were ravenous after our gardening efforts and needed a quick, delicious and filling dinner.
I used some puff pastry that I had in our fridge and made a couple of vegetable tarts, one using the fresh asparagus, for us to devour along with some salad for dinner.

I scored a border around each rectangle of puff pastry, pricked the pastry all over inside the border, then added my toppings.
One tart was Pesto, Asparagus and Mozzarella - brush pesto over the pastry inside the scored border, arrange the asparagus on top then sprinkle over small pieces of Mozzarella cheese. Bake at 200C/180C Fan for 15 - 20 minutes.
The other tart was Tomato, Courgette, Pepper and Mozzarella - spread tomato paste over the pastry inside the scored border, arrange the courgettes and pepper on top then sprinkle over small pieces of Mozzarella cheese. Bake at 200C/180C Fan for 15 - 20 minutes.
These tarts would also be fab to take on a picnic or for a weekend lunch.
