OUR FAMILY MEAL PLAN FOR WEEK OF 24/09/18 - £45

We're still in super frugal mode this week leading up to payday. Hopefully things with our tax credits will be sorted out soon so our meal plans can be slightly more adventurous and varied again.  I'm trying to get our groceries as cheaply as I can this week whilst still having tasty, filling and nutritionally sound meals.

Breakfasts will be porridge with foraged blackberries from the freezer, there's leftover plum and apple compote from last week that we can use too.

Lunches will either be egg and mayo/homemade hummus, with grated carrot and sliced cucumber.  There will be a piece of fruit and baked treat for afters.  Weekend lunches will be Twice Baked Potatoes and End of the Week Frittata.


Snacks will be popcorn, scones, and a cup of soup with a homemade bread roll.  I've made two batches of Tomato Soup and Basic Vegetable Soup and frozen them in portions for after school snacks.

Dinners

Slow Cooker Red Lentil Bolognese, with pasta one night and on baked potatoes later in week


Slow Cooker Hoppin' John with rice and steamed greens


Pearl Barley Risotto (two nights)


Slow Cooker Black Eye Bean Chilli with rice and mixed vegetables

2 tsp ground cumin
2 tsp ground coriander
1 tsp chilli powder (use more or less to taste)
200g black eyed beans
1 bay leaf
2 tsp smoked paprika
1 tsp dried oregano
1 Tblsp marmite/vegemite
1 Tblsp tomatoe paste
400g tin chopped tomatoes
500ml water

Put all the ingredients in your slow cooker, stir well to combine.  Cook on low for 8 hours.  We serve ours with a dollop of natural yoghurt or soured cream, cooked rice, and mixed vegetables.

Slow Cooker Hoppin' John

I'm always on the look out for delicious, frugal and easy recipes to feed our family.  I discovered Hoppin' John, also known as Carolina Rice and Peas, in a Facebook group about frugal cooking.  It's traditionally served at New Year, with collared greens.  

There were various methods and quantities given in the Facebook group, each family has their own take on the basic recipe.  I wondered if I could make a slow cooker version that was really low faff and tasty.  After a little experimentation I managed to develop a recipe that is easy, tasty, and very thrifty indeed. 

The dish cost £2.61 to feed 6 generously for dinner, and two for lunch the next day.  That's around 33p per serving.  

Black eyed beans (300g) 72p

Hoppin' John

300g dried black eyed beans
500g cooking bacon, diced
2 onions, roughly diced
4 cloves of garlic, minced
900ml water or weak vegetable stock
3 spring onions, chopped
500g wilted greens
500g cooked rice

Put the beans, onions, garlic and bacon into the slow cooker then pour over the water/stock.  Give everything a stir to combine then set to low heat and cook for 8 hours.  We served ours over rice, garnished with chopped spring onions, and accompanied by wilted greens.

Leftovers reheat well the next day and I'm told they are called Skippin' Jenny when eaten as leftovers.  I've not tried freezing the leftovers, we've been too keen to eat them, so if you do let me know how you get on.



OUR FAMILY MEAL PLAN FOR WEEK OF 20/08/18 - £73

Apologies for the lack of Meal Plan on the blog last week, I totally ran out of weekend, and by the time I'd written it up it was Wednesday and I thought it would be too far into the week to publish it.

It's the fifth week of the school holidays, only a couple of weeks left. We've been on outings locally, taking our own lunch and snacks to save money.  My middle two daughters had a two hour pottery class recently and thoroughly enjoyed it so we'll try and sort some more sessions later in the year, they've also been to some cheap sessions at the movies - taking their own snacks of course.  We've also visited some of the local museums for free and low cost workshops.

Our back garden is still going strong supplying us with salad greens, fresh herbs, raspberries, and loads of apples.  We went foraging on the local common last weekend and picked 4.5kg of blackberries, making sure we left plenty behind for other foragers to pick.  I've frozen 2kg, made jam with 1.5kg, and made batches of muffins and crumble with the rest, combined with apples from our tree.  We ate some and some are stashed in the freezer for this week and next.

Breakfasts will be cereal and milk or toast and spread, both with a piece of fruit for afters.  On the weekend we'll probably have pancakes and bacon sandwiches.

Lunches will be pasta salad, twice baked potatoes, mini frittatas, quesadillas, baked beans on toast, noodle bowls, and a fridge clear out crustless quiche.


Dinners

Speedy Vegetable Curry

300g quinoa
140g curry paste
3 peppers, diced
3 sweet potatoes, peeled and diced
400g tin chopped tomatoes
400ml tin coconut milk
500g frozen mixed vegetables

Cook quinoa according to packet instructions.  Put a large saute pan over a medium heat.  Add the curry paste and cook for a minute or two until fragrant.  Add the peppers and sweet potatoes, stirring to coat them in the curry paste.  Pour in the tinned tomatoes and coconut milk.  Bring to a simmer, cover and cook for 10 minutes.  

Uncover the pan, stir through the mixed vegetables, and simmer uncovered for around 10 - 15 minutes until the vegetables are cooked through and the sauce has thickened slightly.  


Spring Rolls

12 sheets filo pastry
sesame oil, for brushing
6 spring onions, thinly sliced
3 carrots, grated or very thinly sliced
2 peppers, very thinly sliced
300g spring greens, finely chopped
3 cloves garlic, minced
2 tsp finely grated fresh ginger
1 or 2 tsp Chinese 5 spice
1 Tblsp soy sauce, or more to taste

Preheat your oven to 190C/170C Fan/Gas Mark 5 and line a large baking tray with baking paper.

Mix all the filling ingredients together in a bowl until well combined.  Unwrap the filo and cover with a damp tea towel to stop them drying out.  Take two of the sheets, brush them with sesame oil and lay one on top of the other.  

Put 1/6 of the filling in a line down the centre of the pastry.  Bring the bottom edges up over the filling then roll the rest of the pasty over the filling, a bit like making a burrito.  Put the spring roll on your prepared tray.  Repeat the process with the rest of the pasty and filling.  

Bake in the oven for around 25 - 30 minutes until the pastry is golden and crisp.  Leave to cool for a few minutes before serving, and take care as the filling will be rather hot.


Creamy Bacon and Butterbean Bake

2 x 400g cans butterbeans, drained
300g bacon, diced and cooked
2 cloves garlic, minced
180ml whipping cream
100g hard cheese, finely grated
2 tsp dried mixed herbs

Preheat your oven to 190C/170C Fan/Gas Mark 5.

Reserve a handful of cheese for topping.  Combine all the other ingredients in an ovenproof dish.  Sprinkle over the reserved cheese and then bake for 25 minutes.  Cool a little before serving.  We'll be having ours with steamed greens and mixed vegetables.


Crispy Curry Chicken

1 cup wholemeal flour
3 Tbsp curry powder
2 free range eggs
¼ cup milk
10 - 12 chicken drumsticks, skin removed

Preheat your oven to 200C and line a baking tray with foil or baking paper.  On a large plate, mix together the flour and curry powder.  On a plate or in a shallow bowl, beat together the egg and milk. 

Coat the chicken in the flour mixture, then dip the chicken into the egg mixture allowing the excess to drip off.  Dip the chicken in the flour mixture for a second time and gently shake off the excess.

Place the chicken on the prepared tray, cover and chill for 30 minutes in the fridge.  Take the chicken out of the fridge and bake for approximately 45 minutes or until the chicken is cooked through.  We'll be serving ours with homemade coleslaw and oven baked sweet potato wedges.


Mini Meatloaves

500g sausage meat
500g lean mince
1 onion, diced
3 Tblsp tomato sauce/ketchup, or sweet chilli sauce
1 free range egg, lightly beaten
1/2 cup rolled oats
2 Tblsp low-salt soy sauce
1/2 teaspoon dried mixed herbs
1/2 cup frozen sweetcorn
1/2 cup frozen peas
250ml/1 cup tomato-based pasta sauce

Preheat your oven to 180C.  With slightly wet hands mix together all of the ingredients except the pasta sauce.  If the mixture seems too wet, add some more rolled oats to help hold it together.

Spray muffin tins with a little cooking oil.  Spoon the mixture into greased muffin tins. Once the mixture has all been used, gently press down the tops of the meatloaves with the back of a spoon.  This helps press them into the tins, and also ensures even cooking.

Bake for about 20 to 25 minutes until cooked through and no longer pink in the middle.  As soon as the meatloaves are out of the oven, top each of them with a spoonful of pasta sauce.  Leave to cool in the tin for at least 15 minutes before serving.


Chickpea and Chorizo Stew

200g chorizo, diced
2 onions, diced
2 peppers, diced
2 celery sticks, finely diced
2 carrots, finely diced
2 x 400g chickpeas, drained
2 x 400g tinned tomatoes
2 tsp paprika

Put the chorizo into a large saute pan over a medium heat.  Cook, stirring until the chorizo starts to get crispy and the delicious oil runs from it.  Add the onions, peppers, celery, and carrot to the pan with a little extra oil if necessary.  Stir frequently until the vegetables start to soften.  Add the chickpeas, tomato and paprika stirring to combine everything.  Bring to a simmer and cook, uncovered, until the vegetables are tender.  Add a little water if necessary, and keep an eye on the pan and stir every so often.  I'll serve this with cooked rice and steamed greens.

Courgette, Sausage, and Rice Stuffed Squash

I was delighted to be asked by Debbie and Andrew's Sausages to create a harvest themed recipe to celebrate their #MakeMySausage Competition.

Our favourite Debbie and Andrew's sausage is the Harrogate 97% Pork Sausage which is wheat, gluten, and dairy free.

We have had rather a lot of courgettes to use up in our late Summer harvest and I was fortunate to be able to purchase a couple of small round squash from the local market for a very good price.  I decided to combine the two with some other delicious ingredients to make Courgette, Sausage and Rice Stuffed Squash.  A delicious dish to usher in the start of Autumn whilst using up the last of some Summer produce.  

My husband and I devoured this dish for a hearty lunch, with plenty of leftovers stashed in the freezer, so it would easily feed all 6 of us for dinner.  Quick to make, filling and thrifty, a great weeknight or weekend dinner option when it's chilly outside and comfort food is required.



Courgette, Sausage, and Rice Stuffed Squash

2 or 3 small round squashes, depending on how many people you are feeding
6 good quality pork sausages
2 large courgettes, finely sliced
2 peppers, finely diced (any colour will do)
2 tins chopped tomatoes, I used 440g tins with added chilli but plain would be fine
1 pouch microwave rice, I used wholegrain brown rice

Preheat your oven to 200C/180C/Gas Mark 6/400F.  Line a baking tray with non-stick baking paper.  Slice your round squash in half.  Scoop out the seeds and stringy bits in the centre.  Rub a little oil onto the cut surfaces of the squash then place face down on the baking tray.  Bake for approximately 30 - 45 minutes or until the squash is tender.
Whilst the squash are baking, make the filling.  Squeeze the sausage meat out of the skins into a large pan set over a moderate heat.  Break the sausage meat up as it cooks, you want a fairly fine mince like consistency.  Once the sausage is no longer pink, add the finely sliced courgette and diced pepper, cook until tender.  Pour in the tinned tomatoes and add the pack of cooked rice.  Cook for 5 minutes until slightly thickened.

Spoon the filling into the squash halves.  Sprinkle over some grated strong cheddar then bake for 15 minutes until the cheese is bubbling, the filling has heated through, and the squash are really tender.  We served ours with a large helping of steamed greens.

Our #thriftyorganic Meal Plan for this week

I was delighted to be asked to compile a thrifty Meal Plan for Organic UK to celebrate Organic September which is part of the Organic Trade Board’s ongoing ‘Organic. Naturally Different’ campaign I've joined in with their #ThriftyOrganic challenge and swapped my regular weekly shop for an organic one, to see how much of a difference there is in cost and taste.

We grow as much of our own organic produce as possible and it does taste better, perhaps due to the work that went into producing it, or maybe because it has been freshly picked.  At the moment we've got an abundance of late summer produce so I have included some of that in our Meal Plan this week.

A budget of £80 was set to feed all 6 of us this week, using as much organic produce and products as possible. I have supplemented our shop with homegrown produce such as greens, salad, herbs, and foraged berries and other fruits.

Breakfasts will be porridge with apple compote, made with apples from the trees in our back garden.

Packed Lunches will be Versatile Vegetable Pasties with homemade hummus and vegetable crudites, yoghurt with homemade fruit compote and a small baked treat.

Bubs and I will be having Root Vegetable and Red Lentil Dhal and Red Lentil Bolognese for our lunches at home.

Weekend Lunches will be Mini Frittatas and Twice Baked Potatoes.

Dinners

Green Goddess Pasta - Meatfree Monday


500g organic wholewheat pasta
380g organic chickpeas, drained (reserve 80ml chickpea water)
80ml olive oil
juice of 1 organic lemon
200g orgaic spinach
100g organic kale
2 handfuls fresh basil leaves
4 cloves organic garlic, peeled and minced
75g grated cheddar cheese
Freshly ground black pepper, to taste

Cook pasta according to packet instructions.  Whilst the pasta is cooking make the sauce.  Put all the ingredients in a power blender or food processor in the order listed then blend until smooth.  Add a little of the pasta cooking water to thin the sauce if necessary.

Drain the pasta, pour over the sauce and mix to combine.  Serve with a little finely grated parmesan and sliced cherry tomatoes if you wish.

We shopped at Sainsbury's this week, mostly from their So Organic range. At the moment Tesco have a 3 for 2 offer on organic vegetables.  Keep a look out for other supermarket offers which make shopping organic more affordable.
