Delicious Fish Curry

This is a delicious, easy and quick fish curry perfect for a busy weeknight.  I've been trying to find simple and thrifty ways of incorporating more fish into our Meal Plans as it's recommended that we eat at least two portions of fish a week, one being oily fish.  I normally use frozen or tinned fish to keep costs down.

This recipe uses frozen white fish fillets, you could use frozen salmon fillets instead.  If you're in a rush, or don't like cooking rice from scratch, you could use microwave rice pouches.  I usually serve our curry with steamed greens, or steamed mixed vegetables.

Delicious Fish Curry

300g basmati rice
1 Tblsp oil
2 large onions, sliced
2 garlic cloves, finely chopped 
400g tin chopped tomatoes or 450g fresh tomatoes, cut into chunks
3 Tblsp tikka curry paste
400g can coconut milk, full fat
500g frozen skinless and boneless white fish fillets
handful of fresh coriander, roughly chopped

Put a large saucepan of water on to boil and cook the rice following pack instructions. Meanwhile, heat the oil in a large, wide saucepan over a medium heat and add the onions. Cook for 5-10 mins until softened and starting to colour. Add the garlic and tomatoes, and fry for 2 mins. Add the curry paste, fry for 2 mins more, then pour in the coconut milk and bring to the boil. Add the fish to the pan and simmer gently for 15 minutes or until the fish is just cooked through. Turn off the heat. Sprinkle the coriander over the curry and serve with the rice.





OUR FAMILY MEAL PLAN FOR WEEK OF 13/01/19 - £66

Our back to routine week last week didn't exactly go to plan.  Our 12yo was poorly all week, with what turned out to be flu, and I've got yet another cold.  Aside from more soups than planned, and some homemade Lemon, Honey and Ginger Drink we stuck to our Meal Plan fairly well.

Hopefully this week will be back to proper normal, and everyone will be well again.  We've a play date on Tuesday, as well as the usual evening/after school events so I've factored them all in to our Meal Plan for the week.

We're getting low on spices and stock cubes so I've added them to the list this week.  We've still got some plain and self raising flour in the cupboard so I'm not getting any this week.  I've added extra rice and some popping corn kernels so I can make rice pudding pots and popcorn for snacks.

Breakfasts will be cereal and hot milk or porridge, both with homemade fruit compote or sliced banana. Weekend breakfasts will be toast and pancakes.

Packed lunches will be 5 Ingredient Eggy Quinoa Cups twice, and Wholemeal Savoury Scone Swirls three times.  Packed lunches will include some Vegetable Crisps, a piece or two of fruit and a baked treat for afters.  Weekend Lunches will be soups from the freezer with homemade wholemeal bread rolls.  

Slow Cooker Bean Chilli

2 onions, peeled and finely diced
500g sweet potato, peeled and cut into roughly 2cm/¾in chunks
2 peppers, deseeded and finely diced
2 garlic cloves, crushed
1 tsp ground cumin
1 tsp ground coriander
1 Tblsp sugar
200ml hot vegetable stock (made with 1 vegetable stock cube)
400g tin chopped tomatoes
2 x 390g tins red kidney beans in chilli sauce
400g tin mixed beans, drained and rinsed
1 tsp mixed dried herbs

Put all the ingredients into a slow cooker. Stir well then cover with the lid and cook on high for 3–4 hours or low for 8–10 hours until the sauce has thickened and the sweet potato is tender.

Mixed Vegetable and Egg Fried Rice

Simple Chicken Casserole

2 Tblsp plain flour
1kg chicken thighs, bone in and skin on
2 Tblsp oil
2 onions, finely sliced
4 - 6 carrots, sliced into thick batons
2 tsp dried mixed herbs
500ml chicken stock

Preheat your oven to 160C/Gas Mark 3.  Season the flour with a little salt and pepper then coat the chicken thighs in the seasoned flour.  Heat the oil in a large, heavy based casserole dish over a high heat then brown the chicken thighs on all sides.  Add the vegetables, herbs, and enough stock to just cover everything.

Bring to a simmer, cover with a lid and then put in the oven for one and a half to two hours until the chicken and vegetables are tender and soft.  We'll be serving ours with mashed potato and steamed greens.


Slow Cooker Vegetable Stew with Dumplings

500g sweet potatoes, peeled and chopped into chunks
2 onions, thinly sliced
4 carrots, cut into chunks
3 parsnips, cut into chunks
2 Tblsp plain flour
400g tin chopped tomatoes
2 Tblsp tomato paste
350ml hot vegetable stock (made with 1 stock cube)

Dumplings:
200g self-raising flour
75g vegetarian suet (I used Trex)
125ml cold water

Put the prepared vegetables into the slow cooker. Sprinkle over the flour and stir to coat the vegetables. Add the chopped tomatoes, tomato paste and stock. Stir well then cook on high for 4 hours.

Make the dumplings. Put the flour in a large mixing bowl and season with salt and pepper. Add the suet and rub into the flour until combined. Stir in enough cold water to bring the mixture together as a soft, dough. Divide into 12 equally sized pieces and roll each into a ball.

Remove the lid from the slow-cooker then arrange the dumplings gently on top. Replace the lid and continue to cook on high for a further 25-30 minutes, or until the dumplings are cooked through. We’ll be serving ours with steamed greens.

OUR FAMILY MEAL PLAN FOR WEEK OF 15/10/18 - £68

We've a busy week this week, with a birthday on Monday and a couple of evening activities.  This means we'll need lots of easy meals, as we're all knackered leading up to Half Term.  I've once again decided to use tasty recipes I found on the Internet for our Meal Plan.  We're really enjoying looking for new recipes to try.  I'm sure I'll blog more family dinners for our Meal Plans soon, but in the meantime it's great to be able to try out recipes from elsewhere. 

Breakfasts will be porridge, it's finally going to be cold enough for it after an unseasonably warm spell of weather.  I've made a couple of batches of Healthy Berry Breakfast Muffins for particularly busy mornings.  Weekend breakfasts will be pancakes and bacon butties.

Packed lunches will be Wholemeal Savoury Swirls, accompanied by crudites, a piece of fruit and a baked treat.  Weekend lunches will be Veggie Bread Parcels and Mini Fritattas

Our Family Meal Plan for week of 03/09/2018 - £60

We got through out Mother Hubbard week last week, and I took advantage of the empty fridge and freezer to thoroughly clean both and defrost the freezer.  I also cleaned our oven, because of a spillage, and it's still gleaming.  I loathe cleaning the oven, it's one of my least favourite jobs so a the suggestion of many friends I've purchased an oven liner to put on the bottom of our oven which should make spillage clean up much easier.

We're staying with the frugal theme with the Meal Plan this week as I'm bracing myself for the inevitable school trip letters the first couple of weeks back, and other unforeseen expenses that crop up once school starts.

It's back to routine for us towards the middle of this week, although 3yo doesn't start back at Nursery until next Monday.  The holidays have seemed rather long and all of my children are welcoming the prospect of getting back to routine and starting the new school and college year.

Our apple tree still has enough fruit to keep us going this week, and we've been blackberry picking again too.  We've rhubarb, fresh herbs, chard and rocket from the back garden. The weather is still fairly warn so the garden is still giving us plenty of produce, the apple tree will probably not have fruit left by next week though.

Breakfasts will be overnight oats, granola with yoghurt and fruit, or porridge and weekend breakfasts will be pancakes and bacon butties.

Packed lunches will be Quinoa and Pearl Barley Salad, cooked pearl barley and quinoa mixed with diced celery, peppers, cucumber, grated carrots, and chopped fresh herbs with a garlic yoghurt drizzle.  There'll of course be a piece of fruit and baked treat for afters.  Weekend lunches will be Bean and Rice Burritos and Homemade Pizzas.

Snacks will be popcorn, homemade biscuits, homemade toasted teacakes and English Muffins

OUR FAMILY MEAL PLAN FOR WEEK OF 20/08/18 - £73

Apologies for the lack of Meal Plan on the blog last week, I totally ran out of weekend, and by the time I'd written it up it was Wednesday and I thought it would be too far into the week to publish it.

It's the fifth week of the school holidays, only a couple of weeks left. We've been on outings locally, taking our own lunch and snacks to save money.  My middle two daughters had a two hour pottery class recently and thoroughly enjoyed it so we'll try and sort some more sessions later in the year, they've also been to some cheap sessions at the movies - taking their own snacks of course.  We've also visited some of the local museums for free and low cost workshops.

Our back garden is still going strong supplying us with salad greens, fresh herbs, raspberries, and loads of apples.  We went foraging on the local common last weekend and picked 4.5kg of blackberries, making sure we left plenty behind for other foragers to pick.  I've frozen 2kg, made jam with 1.5kg, and made batches of muffins and crumble with the rest, combined with apples from our tree.  We ate some and some are stashed in the freezer for this week and next.

Breakfasts will be cereal and milk or toast and spread, both with a piece of fruit for afters.  On the weekend we'll probably have pancakes and bacon sandwiches.

Lunches will be pasta salad, twice baked potatoes, mini frittatas, quesadillas, baked beans on toast, noodle bowls, and a fridge clear out crustless quiche.


Dinners

Speedy Vegetable Curry

300g quinoa
140g curry paste
3 peppers, diced
3 sweet potatoes, peeled and diced
400g tin chopped tomatoes
400ml tin coconut milk
500g frozen mixed vegetables

Cook quinoa according to packet instructions.  Put a large saute pan over a medium heat.  Add the curry paste and cook for a minute or two until fragrant.  Add the peppers and sweet potatoes, stirring to coat them in the curry paste.  Pour in the tinned tomatoes and coconut milk.  Bring to a simmer, cover and cook for 10 minutes.  

Uncover the pan, stir through the mixed vegetables, and simmer uncovered for around 10 - 15 minutes until the vegetables are cooked through and the sauce has thickened slightly.  


Spring Rolls

12 sheets filo pastry
sesame oil, for brushing
6 spring onions, thinly sliced
3 carrots, grated or very thinly sliced
2 peppers, very thinly sliced
300g spring greens, finely chopped
3 cloves garlic, minced
2 tsp finely grated fresh ginger
1 or 2 tsp Chinese 5 spice
1 Tblsp soy sauce, or more to taste

Preheat your oven to 190C/170C Fan/Gas Mark 5 and line a large baking tray with baking paper.

Mix all the filling ingredients together in a bowl until well combined.  Unwrap the filo and cover with a damp tea towel to stop them drying out.  Take two of the sheets, brush them with sesame oil and lay one on top of the other.  

Put 1/6 of the filling in a line down the centre of the pastry.  Bring the bottom edges up over the filling then roll the rest of the pasty over the filling, a bit like making a burrito.  Put the spring roll on your prepared tray.  Repeat the process with the rest of the pasty and filling.  

Bake in the oven for around 25 - 30 minutes until the pastry is golden and crisp.  Leave to cool for a few minutes before serving, and take care as the filling will be rather hot.


Creamy Bacon and Butterbean Bake

2 x 400g cans butterbeans, drained
300g bacon, diced and cooked
2 cloves garlic, minced
180ml whipping cream
100g hard cheese, finely grated
2 tsp dried mixed herbs

Preheat your oven to 190C/170C Fan/Gas Mark 5.

Reserve a handful of cheese for topping.  Combine all the other ingredients in an ovenproof dish.  Sprinkle over the reserved cheese and then bake for 25 minutes.  Cool a little before serving.  We'll be having ours with steamed greens and mixed vegetables.


Crispy Curry Chicken

1 cup wholemeal flour
3 Tbsp curry powder
2 free range eggs
¼ cup milk
10 - 12 chicken drumsticks, skin removed

Preheat your oven to 200C and line a baking tray with foil or baking paper.  On a large plate, mix together the flour and curry powder.  On a plate or in a shallow bowl, beat together the egg and milk. 

Coat the chicken in the flour mixture, then dip the chicken into the egg mixture allowing the excess to drip off.  Dip the chicken in the flour mixture for a second time and gently shake off the excess.

Place the chicken on the prepared tray, cover and chill for 30 minutes in the fridge.  Take the chicken out of the fridge and bake for approximately 45 minutes or until the chicken is cooked through.  We'll be serving ours with homemade coleslaw and oven baked sweet potato wedges.


Mini Meatloaves

500g sausage meat
500g lean mince
1 onion, diced
3 Tblsp tomato sauce/ketchup, or sweet chilli sauce
1 free range egg, lightly beaten
1/2 cup rolled oats
2 Tblsp low-salt soy sauce
1/2 teaspoon dried mixed herbs
1/2 cup frozen sweetcorn
1/2 cup frozen peas
250ml/1 cup tomato-based pasta sauce

Preheat your oven to 180C.  With slightly wet hands mix together all of the ingredients except the pasta sauce.  If the mixture seems too wet, add some more rolled oats to help hold it together.

Spray muffin tins with a little cooking oil.  Spoon the mixture into greased muffin tins. Once the mixture has all been used, gently press down the tops of the meatloaves with the back of a spoon.  This helps press them into the tins, and also ensures even cooking.

Bake for about 20 to 25 minutes until cooked through and no longer pink in the middle.  As soon as the meatloaves are out of the oven, top each of them with a spoonful of pasta sauce.  Leave to cool in the tin for at least 15 minutes before serving.


Chickpea and Chorizo Stew

200g chorizo, diced
2 onions, diced
2 peppers, diced
2 celery sticks, finely diced
2 carrots, finely diced
2 x 400g chickpeas, drained
2 x 400g tinned tomatoes
2 tsp paprika

Put the chorizo into a large saute pan over a medium heat.  Cook, stirring until the chorizo starts to get crispy and the delicious oil runs from it.  Add the onions, peppers, celery, and carrot to the pan with a little extra oil if necessary.  Stir frequently until the vegetables start to soften.  Add the chickpeas, tomato and paprika stirring to combine everything.  Bring to a simmer and cook, uncovered, until the vegetables are tender.  Add a little water if necessary, and keep an eye on the pan and stir every so often.  I'll serve this with cooked rice and steamed greens.
