Quick Yoghurt Flatbreads

I made these flatbreads to have with our dinner, they are so quick to make and perfect for helping to fill up hungry tums.  Great with a stew or filled with roasted vegetables and salsa, fab for homemade kebabs too.  I've made them for lunch previously, we spread hummus on them then stuffed them full of salad leaves, grated carrot and some sliced tomato. Delicious!

Quick Yoghurt Flatbreads

225g wholemeal flour or plain white flour
2 tsp dried mixed herbs (optional)
1 1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
180g pot Greek style yoghurt
2 Tblsp oil

Combine the flour, herbs (if using), baking powder bicarb and salt in a large bowl.  Stir to combine.  Add the yoghurt and oil then mix until a dough forms.  

Turn out onto a lightly floured surface and knead until smooth.  Divide the dough into 10 - 12 portions.  Cover the dough portions with a moist tea towel to stop them drying out.  Use a rolling pin to roll out each dough portion until it is about the thickness of a £1 coin, 1/8 inch thick.

Heat a frying pan over a moderate heat and brush with a little oil.  Cook each flatbread for a few minutes each side, turning when the bottom is golden brown.  Cook for another few minutes to brown the other side.  Set aside on a plate and cover with a clean tea towel, this will keep them soft whilst the rest of the flatbreads cook.
