Really Quick and Easy Yoghurt Cake

My daughters baked this cake last weekend, it is so quick to make and a delicious afternoon tea treat.


Really Quick and Easy Yoghurt Cake

250ml yoghurt, I used vanilla flavour
125ml cup milk
125ml cooking oil (not olive)
2 large free range eggs
Grated zest of one lemon
300g self-raising flour
200g caster sugar

Preheat the oven to 180C/160C Fan.  Grease and line a 21cm round or square cake tin.

Mix the first five ingredients together in a bowl.  Sift the flour and sugar over the top.  Mix until just combined.  Don't beat or over mix the batter.  Bake for 35 minutes or until a skewer inserted into the centre comes out clean of crumbs.

  1. Your cake looks yummy. I have often used a similar recipe for yogurt cake - the variations are endless. One of my favourite variations is orange and spice - replace the lemon zest with orange zest and add a teaspoon of mixed spice. xxx
