Giant Sausage Rolls


This recipe is an easy way to make 6 sausages go a long way, in fact the two giant sausage rolls that I made were our dinner for 2 nights.  The key is to use good quality sausages, the ones I used were 97% meat, and to season the mixture well or use flavoured sausages.

I was able to purchase sausages from a supermarket premium range for 75p reduced for a quick sale, and the puff pastry was also similarly reduced so I bought that for 30p.  Both items were purchased an hour before the supermarket closed and had been reduced earlier in the day but were reduced further as it was close to closing time.  Hurrah!

Giant Sausage Rolls
Serves 8 - 10

Filling:
500g sausage meat
1 large or 2 small carrots, grated
1 large courgette, grated then moisture squeezed out

If you aren't using flavoured sausages then add:
2 spring onions, white and green parts, finely chopped
2 tsp mixed herbs
2 tsp mild or wholegrain mustard

1 sheet puff pastry, thawed
milk for glazing

Preheat your oven to 210C/190C Fan.  Line a baking tray with non-stick baking paper.

In a large bowl mix all the ingredients together until fully combined.  Lay out the pastry sheet and spread the sausage meat filling in a line down the middle lengthwise taking up a little less than a third of the width.  Moisten the edges of the pastry with a little water then fold them over the filling, crimp gently with a fork to seal.

Turn the sausage roll over so the join is underneath then cut slashes every inch or so along the top.  If the sausage roll is too long to easily fit on your oven tray cut it in half an put the halves side by side on the oven tray as we did.  Brush over some milk which will give the pastry a lovely golden glaze in the oven.  Bake in the oven for 20 - 25 minutes until golden and cooked through.  Serve hot or cold.

  2. These look like mighty fine ginormous sausage rolls! I particularly like how you've added plenty of extra 'hidden' veggies to them, what a wonderful idea. They'd definitely make for fine picnic fare, thanks so much for entering them to the Four Seasons Food challenge!

  3. Huge great big sausage rolls!! How brilliant! Everyone loves a sausage roll and I love that these are nice and big enough for sharing. I also used to love hitting the supermarkets just before closing when the best deals are available! Very thrifty indeed....perfect for Credit Crunch Munch and FSF also :)
