Honey and Chocolate Comfort Cake



I was having a cuppa at The Urban Larder the other day and purchased some local flour to go with some local organic honey which was a gift from a foodie friend.  I do love Polly's cafe as the coffee is superb, it has a very casual and relaxed atmosphere, there are plenty of locally produced morsels to devour onsite or purchase to take away, and there are gorgeous locally created  crafts to admire and buy as well.  

I of course baked some honey bread with the honey and flour but also wanted to bake a cake with it. I decided to try and find a recipe that would show off both the flour and honey.  After having a search on the internet I discovered this Honey and Chocolate Comfort Cake recipe.

Just the name of the recipe sounds like a delicious hug after a long cold winter so I knew I had to bake it!  

The recipe involves a little bit of faff the night before then just a quick mix the next morning.  I will bake it again but next time will add more honey to the cake.  The espresso and dark chocolate are quite bitter so the additional sweetness of more honey would be welcome.  That said, the cake was delicious with a dollop of cream and rather sizeable.  Plenty of cake to share around with friends for a school holiday afternoon tea.
