Chocolate Banana Cake



We had a couple of rather spotty, over-ripe bananas that needed using up so I decided to bake a cake to brighten up a rainy afternoon.  I've baked many banana recipes such as cakes, muffins, loaves and even cookies but I wanted a slightly more decadent and indulgent afternoon tea treat because friends were coming over.  My children convinced me that chocolate needed to be part of the recipe.  This is the cake we came up with.  

Chocolate Banana Cake

125g butter or baking spread
170g caster sugar
1 free range egg
1 tsp vanilla extract
2 over-ripe bananas, peeled and mashed
100g plain chocolate, melted
200g plain flour
1 tsp bicarbonate of soda
125ml milk

Preheat your oven to 180C/160C Fan. Grease and line a 20cm round cake tin.

Beat the butter and sugar together until pale and fluffy.  Beat in the egg and vanilla.  Fold in the plain flour, bicarbonate of soda and melted chocolate until completely combined.  Carefully fold in the milk, you should end up with a smooth cake batter. 

Pour the mixture into your prepared tin.  Bake for approximately 55 minutes then test by inserting a skewer into the centre of the cake, it should come out clean.  If the skewer does not come out clean cook the cake for 5 - 10 minutes more then retest.  Cool in the tin for 5 minutes before turning out onto a wire rack to cool completely.
