Apricot Anzac Muffins



I baked these muffins this afternoon to conquer the afternoon energy slump after a trip to the local park. They contain all the delicious ingredients that I would normally put into Anzac Biscuits, with the addition of dried apricots and cinnamon.  We made muffins instead of biscuits as an experiment and judging by the rate my three daughters and their friends devoured them I think it was a success.


Apricot Anzac Muffins

1 cup plain flour
2 tsp baking powder
½ cup desiccated coconut
½ cup rolled oats
½ cup wholemeal flour
1 cup light soft brown Sugar
1 tsp ground cinnamon
150g chopped ready to eat dried apricots
2 free range eggs
60g butter, melted
250ml milk
½ tsp bicarbonate of soda
¼ cup golden syrup

Preheat your oven to 190C/170C Fan.  Line a 12 hole muffin tin with paper cases.

Combine the flours, baking powder, coconut, oats, soft brown sugar, dried apricots and cinnamon in a large bowl.  Stir to combine then make a well in the centre.

In jug combine the eggs, melted butter, milk, bicarbonate of soda and golden syrup.  Pour the wet ingredients into the dry ingredients and gently mix until everything is just combined.  Don’t over-mix the batter.  Divide the mixture evenly between the paper cases.

Bake for 12-15 minutes until golden and a skewer inserted into the centre of a muffin comes out clean.  Cool in the tin for 5 minutes before turning out to cool completely on a wire rack.

  1. Oh wow. They look brilliant. I LOVE Anzac biscuits. My fake grandad (a story for another time!) once mentioned that he liked them and from then on everyone at church bought him packets of them. He had a massive stash in his cupboard.
    Hmm...I think these might have to make an appearance at work. They'd be great for night shifts.
