Mixed Seed and Nut Brittle

I made this as a present for a friend whose son needed a snack full of energy due to the medication he is on that affects his metabolism.  It is SO easy to make and very tasty, I of course sampled a piece before wrapping up the gift.

Mixed Seed and Nut Brittle

200g mixed nuts
75g mixed seeds
350g caster sugar

Lightly grease a swiss roll tin, I used cooking spray for a light coverage.  Spread the nuts and seeds over the bottom of the tray.  Spread the sugar over the bottom of a non-stick frying pan or saucepan over a medium/high heat and wait for the sugar to melt.  Do not stir! You can swirl the pan around if necessary but do not stir the sugar or it will crystallise.  Once the sugar reaches a lovely caramel colour pour it over the nuts and seeds in the prepared tray.  Gently tap the tray on the bench to get rid of any air bubbles and encourage the melted sugar to evenly cover the nuts and seeds.

Leave to set for at least an hour, it will be very hot.  Once cooled completely hit it gently with a rolling pin to break the brittle into pieces.

Store in an airtight container.  Be careful eating this if you have loose fillings or crowns.  This could finance a brilliant holiday or retirement plan for your dentist.
