NZ Lolly Cake made with Eskimos

There are not enough words to say how much I love my Mum!  She is totally awesome and sends me a few lovely items from NZ via post every so often.  In one of the packages, along with 3 large bags of Milo, were two bags of these:


We could've just devoured them straight from the pack but I decided to use a pack to make Lolly Cake, which is a kiwi classic recipe, and guaranteed to cheer up a rather cold start to the Bank Holiday Weekend.  Here's how you make it:

125 g butter
200g sweetened condensed milk, about 1/2 a tin
1 tsp vanilla extract
250g pack of malt biscuits (UK substitute malted milk biscuits)
190g pack of Eskimos (UK substitute foam fruits or mini marshmallows)
dessicated coconut for topping/rolling
In a large saucepan melt the butter over a low heat, stir in half a tin of condensed milk, then add the vanilla extract. Heat gently until everything has completely mixed together then take the mixture off the heat to cool slightly.

Put the biscuits in to a large plastic bag and use a rolling pin to bash and roll over them until they are fine crumbs.

Using kitchen scissors, slice each Eskimo into about 8 small chunks.  Add the biscuit crumbs and Ekimos to the condensed milk mixture and mix to combine them thoroughly. 

Form the mixture into three or four logs, roll the logs in coconut, then wrap each roll in cling film.  Put the logs into the fridge several hours or overnight.

You can press the mixture into a square cake tin which has been lined with non-tick baking paper or lightly greased.  Press the mixture out so it is about 2cm deep then sprinkle the coconut over the top and press into the top of the lolly cake slightly.

Once the logs have chilled cut them into slices 1-1.5cm thick just before you serve them, or cut the mixture in the cake tin into about 20 squares.

It was enthusiastically devoured by us, our neighbours, and a friend who dropped in for a cuppa on Saturday. I still have another pack which I have hidden in the top kitchen cupboard for later.
