Rolled Oats Biscuits

These biscuits are made at least once a week in our house.  My girls love them as a snack and they are great with a cuppa, put in lunchboxes, or as an afterschool snack.  They are so quick and easy to make.  You could add some raisins or chocolate chips too if you wanted to.

1 cup flour

1 tsp baking powder

1 tsp ground ginger

180g butter

1 cup sugar

2 cups rolled oats

½ tsp baking soda

¼ cup milk

Preheat the oven to 180ºC.  Grease or line a baking tray with non-stick baking paper.

Sift the flour, baking powder and ginger. Soften the butter then cream the butter and sugar in a cake mixer, beat well for about 5 minutes.  Add the flour and rolled oats, fold these in by hand. 

Dissolve the baking soda in the milk, then mix thoroughly into mixture.  Roll spoonfuls into walnut-size pieces, put on your prepared tray, and press down slightly with your hand or a floured fork.

Bake at 180ºC for 15 minutes.
