OUR FAMILY MEAL PLAN FOR WEEK OF 30/04/18 - £71


We've got a busy week ahead, and a very interesting end to the week with me hopefully having gallbladder surgery. It's been a long 5 month wait for a surgery date, I was offered a short notice slot due to another patient cancelling so I took it.  I feel like I've spent most of the weekend either working or cooking as I've baked and cooked some breakfasts, lunches, and dinners in advance of my surgery. 

We have bread flour and baking flour left over from last week as well as frozen mixed vegetables so I won't need to buy those, we've also got lots of rhubarb, chard and herbs from our garden which will also save us money.

Breakfasts will be homemade granola with yoghurt and fruit compote.  Weekend breakfasts will be crumpets and fruited tea cakes, which I made this weekend and have frozen.

Packed lunches will be Super Quick Chickpea and Couscous Salad for some of the week, Wholemeal Savoury Swirls for the rest of the week which I have baked this weekend and frozen.  There will of course be a cruidites, a piece of fruit, and baked treat for afters in the packed lunches.  Weekend lunches will be Bacon and Egg Pie and Twice Baked Potatoes, again I've made these in advance and they're in the freezer.  


Dinners

Vegetable Stew with Dumplings - Meatfree Monday

2 Tblsp oil
25g butter
1 large onion, peeled and diced
2 potatoes, peeled and diced
1 parsnip, peeled and diced
2 large carrots carrots, peeled and diced
1 swede, peeled and diced
2 leeks, finely sliced
2 garlic cloves, crushed
4 sprigs of fresh thyme or 1 tsp dried
1 tsp mustard
2 Tblsp plain flour
1 heaped tsp vegemite (optional)
500ml vegetable stock
400g tin haricot or butter beans, drained and rinsed
salt and pepper

Dumplings:
250g plain flour
2 tsp baking powder
125g butter, diced
2 tsp diced mixed herbs
salt and pepper

Preheat your oven to 180C/Gas Mark 4.

Put the oil and butter in a large flameproof casserole dish over a moderate heat. Add the onion and cook, stirring, for couple of minutes. Add the potatoes, parsnip, carrot, Swede and leeks. Cook for 5 minutes, stirring, over a moderate heat until the vegetables start to turn golden and soften slightly. Reduce the heat slightly and ad the garlic, thyme and mustard. Add the flour and cook for a couple of minutes, ensure the vegetables are well coated in the flour. Add the vegetmite, stock and tinned pulses.

Bring the mixture to the boil, cover with a lid then put in the preheated oven. Bake for 40 - 50 miutes. Whilst the stew is cooking prepare the dumplings. Rub the butter into the flour until it resembles breadcrumbs. stir in the herbs and a little salt and pepper. Add a 1 or 2 tablespoons of water, just enough to form a stiff dough.

Divide the dough into walnut sized balls, cover with clingfilm and chill in the fridge until ready to use. When the stew has baked for 40 - 50 minutes in the oven, remove from the oven and add the dumplings. Ensure the dumplings are partially submerged in the stew. Cover the pot with a lid and cook on the stove top/hob, over a moderate heat, for around 20 minutes until the dumplings have risen and are golden on top. I usually serve this stew with steamed greens.


Quick and Easy Nachos

1 onion, finely diced
2 peppers, finely diced, any colour will do
325g tin sweetcorn, drained
2 tins chilli beans
300g cherry tomatoes, quartered
200g pack tortilla chips
150g grated mature cheddar cheese, or more if you fancy

Mix the onion, peppers, sweetcorn, chilli beans and tomatoes together in a bowl. Put half of the of tortilla chips, in a single layer, into the bottom of a large ovenproof dish. Dollop with around half the vegetable and bean mixture then top with a good handful of grated cheddar. Repeat the process until all the chips, vegetable mixture and cheese have been used up. Preheat your oven to 200C/180C Fan/400F/Gas Mark 6 and bake the nachos in the oven for 10 - 15 minutes until the cheese is melted and bubbling and everything has heated through. I served ours with steamed mixed vegetables on the side.



Slow Cooker Beef Casserole and leftovers pasties the following night

1 kg casserole beef
1 large onion, diced
2 cloves garlic, crushed
1 each red and green pepper, chopped
2 Tblsp plain flour
2 Tblsp tomato paste
250ml beef stock
400g can chopped tomatoes
1 Tblsp dried oregano
400g can cannellini beans, well drained

Cut beef into 2.5cm-3cm pieces and season the beef with salt and pepper. Brown the meat in a frying pan over a high heat and transfer to a slow cooker.

Scatter in the onion, garlic and peppers. Stir the flour, tomato paste and beef stock together to make a smooth paste and pour over the beef. Add the tomatoes, scatter in the oregano and cover.

Sloe Cooker: Cook on low for 6-8 hours or high for 3-5 hours. Add the cannellini beans, stir to mix and allow to heat through before serving.

Oven Cook: Prepare the casserole as above, adding an extra 250ml of beef stock. Cook in a lidded ovenproof dish at 180ºC for 120 minutes.

Hob Cooking: Put the browned beef and other ingredients into a heavy-based pot. Partially cover, and keeping the heat low, simmer until the meat is very tender. Stir occasionally, adding water if needed during the cooking time to keep ingredients just covered. In the last 30 minutes of cooking time, add the tomatoes and cannellini beans.


Vegetarian Shepherdless Pie

1 Tblsp oil
1 onion, diced
3 carrots, diced
2 sticks of celery, diced
2 peppers, diced (any colour)
2 tsp dried mixed herbs
200ml red wine
400g tin chopped tomatoes
2 tsp vegetable bouillon
410g tin green lentils
4 large sweet potatoes, peeled and cut into chunks
100g cheddar cheese, grated

Heat the oil in a frying pan, then sauté the carrot, celery, onion and pepper until the carrot and celery softens slightly. Add the dried mixed herbs and the wine along with the tomatoes and half a tomato tin of water. Sprinkle over the stock cube, stir everything to mix thoroughly and simmer for about 10 minutes. Add the tin of lentils, don’t bother to drain them, then cover and simmer for another 10 minutes.

Meanwhile, boil the sweet potatoes until they’re tender. Drain them well and mash them, adding butter and seasoning to taste. Put the lentil and vegetable mixture into an ovenproof dish, then spoon the sweet potato mash over the top. Sprinkle on the cheese and then either chill in the fridge to cook later or bake for 20 minutes in an oven preheated to 190C/170C fan/Gas Mark 5. If you are cooking this dinner straight from the fridge, cook for about 40 minutes until it is piping hot all the way through and the cheese is bubbling and golden.

OUR FAMILY MEAL PLAN FOR WEEK OF 23/04/18 - £71


My goodness the weather was hot last week! Our weather went from damp and cold the week before, to scorching and dry with several days in mid 20C's and one day was 28C.  Thankfully this week is much more in line with normal April temperatures. 

It's our eldest daughters birthday his week, her 18th, so she's chosen the dinner for that evening.  She's even insisted on baking her own birthday cake.  We've a school trip to London this week too, a long day with extra lunch and snacks required.  And a couple of play dates too, thankfully they're easy to cater for.

Our garden has really grown well this past week with the warmer temperatures so we've plenty of salad greens, rainbow chard and rhubarb to add to our meal plan along with fresh herbs.

Breakfasts this week will be homemade granola with yoghurt and rhubarb and apple compote.  Weekend breakfasts will probably be pancakes on one of the days and perhaps waffles or crumpets the other day.

Packed lunches will be falafel wraps, packed with salad leaves from our garden, accompanied by crudites and herbed yoghurt dip, with a piece of fruit and baked treat for afters.  I'll be making the wraps for the lunches and also the buns for the fish burgers.

Weekend lunches will be twice baked potatoes and on Saturday, and we're going out for lunch at friends on Sunday.  I'll be bringing the drinks and pudding.

Dinners

Vegetable and Bean Hotpot - Meatfree Monday 

1 onion, diced
2 cloves garlic, crushed
1 pepper, diced
2 sticks celery, finely sliced
2 courgettes, sliced
2 carrots, finely sliced
2 sweet potatoes, peeled and diced
400g tin chopped tomatoes
1 tsp cumin
1 tsp ground coriander
2 x 400g tins haricot beans, drained
300ml vegetable stock

Put a large casserole pot over a moderate heat. Saute the onion and garlic until they start to soften.

Add the pepper, celery, courgettes, carrots and sweet potatoes. Cook for 5 minutes, stirring occasionally. You may need to add a little water if the vegetables start to stick to the pan.

Add the tinned tomatoes, spices, haricot beans and stock. Stir well, bring to the boil then cover and simmer for 45 minutes. Check the hotpot every 15 minutes to ensure there is enough liquid in the pot, add a little more water or stock if necessary. Check the seasoning then serve.



Bacon and Egg Pie

500g puff pastry
2 spring onions, thinly sliced
6 rashers of bacon, rind removed and thinly sliced
8 free range eggs
salt and pepper to taste

Preheat your oven to 200C/180 Fan.

Roll out 2/3 of the pastry on a floured surface until large enough to line a 25cm pie dish. Line the pie dish with the pastry. Sprinkle the chopped spring onion and half of the bacon over the pastry, crack in the eggs then sprinkle over the rest of the bacon.

Roll out the remaining pastry and use it to make a lid for the pie. Trim off any excess pastry and crimp the edges to seal. Cut 3 or 4 small vents into the lid of the pie, brush with milk and bake in the oven for 30 - 40 minutes until the pastry is dark golden and crispy.




Fish Burgers with Sweet Potato Wedges

3 spring onions finely sliced
400g fish fillets, finely chopped
1 Tblsp fresh herbs
Juice of half a lemon
1 free range egg
1 slice wholemeal bread made in to breadcrumbs
1 Tblsp flour

Thoroughly mix together the spring onion, fish herbs and lemon juice. Season with salt and pepper then add the egg before mixing thoroughly once again.

Add he breadcrumbs and flour, mix until combined. You should have a firm but moist mixture, if the mixture is a little dry add more lemon juice.

Shape the mixture into burgers, we made 5, and grill or fry for 4 - 5 minutes on each side until cooked through. We serve ours in wholemeal buns with salad and some potato wedges on the side.



Roast Chicken with Roast Vegetables, Steamed Greens and Yorkshire Puddings


Chicken and Roast Vegetable Pasties


Leftover roast vegetables
100g other cooked vegetables
300g leftover roast chicken
1 or 2 tsp dried mixed herbs
1 egg, lightly beaten
500g shortcrust pastry, divided into 3 and rolled out into large squares

Preheat oven to 220°C.

Line an oven tray with baking paper.

Roughly mash the roast vegetables, stir through the other cooked vegetables, chicken and egg until combined. Season with salt and pepper.

Cut 12 squares from the pastry Spoon vegetable mixture evenly amongst pastry squares. Fold pastry squares in half to enclose filling. Crimp with a fork to seal.

Place on the lined tray and bake in oven for 15 – 20 minutes or until golden brown and cooked through. Remove from oven and set aside to cool slightly before serving.

Our Family Meal Plan for week of 16/04/18 - £70


I am really glad that the children are back to school and routine this week, it has been quite a challenging 17 days of school holidays this time around.  I don't know about you but my children tend to develop ravenous appetites during the school holidays, I swear they eat more than the All Blacks rugby team at the moment.

Of course the weather is much better this week, after being generally grim and damp for the two weeks of school holiday.  Our gardens have loved all the rain though and our salad greens, rhubarb and chard are all growing very well indeed as is the herb patch.  This means we've free, freshly picked food to add to our meals this week which is delicious and most welcome.

Our dinners this week are quick, low faff and tasty.  Everyone will be exhausted after the first week back at school and I need to be able to serve dinner early if necessary depending on grumpiness levels.  After a long day at work and school, nobody wants to be waiting an age for dinner to cook and be served up.

Meal Plan 

Breakfasts will be overnight oats or granola with a piece of fruit for afters.  I'll do fruit bread and pancakes on the weekend.

Packed lunches will be Storecupboard Salad and crudites for some of the week and egg salad sandwiches and crudites for the rest of the week both with herbed yoghurt dip. 

Snacks will be homemade popcorn, flapjacks, and fresh fruit.

Dinners

Pizza Beans - Meatfree Monday hearty dinner served with salad greens

Fish parcels - fish and vegetables cooked in foil parcels, accompanied by sweet potato wedges

Mini Frittatas with potato salad and coleslaw



Honey Soy Chicken with Steamed Vegetables and Rice

1kg chicken drumsticks
2 Tblsp soy sauce
1 Tblsp honey
1 tsp tomato paste
1 Tblsp oil
1 Tblsp mustard, I usually use Dijon mustard

Make a few slashes into each chicken portion. This will help the marinade penetrate the chicken and also help it cook faster.

Mix together all the marinade ingredients, pour over the chicken and make sure the chicken is thoroughly coated. Leave to marinate for half an hour at room temperature or overnight in the fridge.

Preheat your oven to 200C/180C Fan. Put the chicken into a roasting dish and bake for 35 - 45 minutes until the chicken is cooked through. We'll be having ours with rice and steamed vegetables.


Quesadillas with coleslaw and sweet potato wedges

12 tortillas, wholemeal wraps or burritos (Store bought or homemade)
2 tins chilli beans
2 peppers, any colour will do (finely sliced)
1 tin sweetcorn, drained
1 spring onion, white and green parts chopped
A couple of large handfuls of grated cheese

Preheat a non-stick frying pan or sandwich press. Top four of the tortillas with the chilli beans, drained sweetcorn, chopped peppers, spring onion, and grated cheese. Cover with remaining tortillas to make a tortilla sandwiches.

Spray frying pan with a little oil. Cook tortillas one at a time in frying pan. Cook on one side for 2 or 3 minutes, then turn and cook the other side for another 2 or 3 minutes, or until the fillings are hot and the cheese has melted. Repeat with the other three tortillas. Allow to cool for a few minutes before serving.
