To celebrate the release of Cloudy With A Chance of Meatballs 2 on DVD and Blu-Ray on 17th February, I've come up our own meatballs themed recipe which is great for a quick supper, fab for on the go dinners or a filling a weekend lunch.
What is Cloudy With A Chance of Meatballs 2 about?
Inventor Flint Lockwood thought he saved the world when he destroyed his most infamous invention - a machine that turned water into food causing cheeseburger rain and spaghetti tornadoes. But Flint soon learns that his invention survived and is now combining food and animals to create – "foodimals!" Flint and his friends embark on an adventurously mouth-watering mission to battle hungry tacodiles, shrimpanzees, hippotatomuses, cheesepiders and other foodimals to save the world – again!
Spicy Meatballs Wraps with Tzatziki
500g lean beef mince
75g wholemeal breadcrumbs
2 Tblsp sweet chilli sauce
2 tsp harissa paste
1 clove garlic, crushed
4 Tblsp soured cream or greek yoghurt
handful of fresh mint, roughly chopped
1/3 of a cucumber, finely diced
1/2 tsp ground paprika
Preheat your oven to 180C/160C Fan. To make meatballs, mix all meatball ingredients in a bowl until well combined. Shape one tablespoonful of the mixture into a meatball then repeat until all the mixture has been used.
Place the meatballs in an ovenproof baking dish and bake in the preheated oven for 20 - 25 minutes until cooked through on top.
To make tzatziki, put all the ingredients listed ingredients into a small bowl and mix until combined. combined.
We served our meatballs in wraps with salad salad greens and a dollop of tzatziki.
