Time for a Coronation Cook Up!

With the 60th anniversary of the Queen’s Coronation just around the corner in June, Horlicks has created a special recipe so you and your family can eat like royalty to help get you in the Coronation mood!

The easy recipe below is a twist on the traditional Coronation Chicken dish – combining the much loved classic curry flavour, with fresh-tasting mango for a delicious alternative.  We made this salad for lunch on a warm Spring afternoon and it was delicious!   

Coronation Chicken Salad with Mango

 

375g-400g cooked chicken
½ mango, peeled and diced
Shredded lettuce

For the dressing:
4 tsp Horlicks
2 tsp Curry paste
6 tbsp Mayonnaise or Greek yoghurt
½ mango, peeled and cubed
Juice ½ Lemon
Salt and pepper

Place all the dressing ingredients into a food processor and blitz until smooth.

Pour the dressing into a bowl.

Shred the cooked chicken and add to the dressing and mix gently to combine.

Place the shredded lettuce onto a serving plate add the chicken and garnish with diced mango.
