Elevenses seems to have been forgotten and been lost in the general rushing around that is a fact of life for most of us. Anchor want to inspire people who feel the need to have a nice little sit, with a cup of tea and a snack, at around 11 o’clock.
I find that a biscuit or two, or perhaps a little slice of cake at this time of day is just what’s needed to recharge and round off the morning nicely.

Peanut Butter and Choc Chip Biscuits
These biscuits are SO easy to make and contain no flour so may be suitable for Coeliacs, check the peanut butter to make sure there's no wheat or gluten in it. These are my favourite emergency biscuit when there is little time to whip up something delicious but I NEED something tasty with a cuppa. *Wipes crumbs from chin* These disappear in seconds whenever I take them to coffee mornings or on the school run. Make sure there is nobody with a nut allergy about though when you are enjoying these, keep everyone safe.
1 cup peanut butter
3/4 cup caster sugar
1 egg, beaten
3/4 cup chocolate chips
Beat the peanut butter and sugar together in a bowl. Mix in the beaten egg thoroughly, then mix in the chocolate chips. The mixture will be quite stiff. I usually use my hand held electric mixer.
Roll tablespoonfuls into balls and put on a baking tray lined with non-stick baking paper. Flatten firmly with a fork.
Bake at 180C for 15-18 minutes until the biscuits are cooked and lightly browned. Transfer to a cake rack to cool and then keep in an airtight container.
